- Soup
- 700 gr boneless chicken
- 4 cloves garlic
- 1.5 tsp black pepper seeds
- 1 tsp coriander seed
- 3 cm ginger
- 2 cm turmeric
- 1 stalk lemongrass
- 3 bay leaf
- 3 lime leaf
- 4 tbsp oil for sauteing
- 6 cups water
- 1 knob garlic (slice then fry it)
- 5 stalks spring onion
- 3 tsp salt
- Complimentary Additives
- 1/4 whole cabbage
- 250 gr bean vermicelli
- 6 boiled eggs
- 250 gr bean sprouts
- 2 stalks celery leaf chop it
- 2 lime
- Plain white rice
Instructions to make Soto Bening Semarang
- Boil the chicken; as waiting for the chicken to boil, prepare the paste ingredients. Make the paste from garlic, black pepper, coriander, ginger, and turmeric using mortar or food processor./Rebus ayam; sambil menunggu ayam mendidih, siapkan bumbu yg dihaluskan. Buat pasta dari bawang putih, lada hitam, ketumbar, jahe, dan kunyit menggunakan mortar atau food processor.


- Heat the oil in a nonstick frying pan and saute the paste ingredients, add the smashed lemongrass, lime leaf, and bay leaf. Saute it till the aroma come. Once the aroma comes, add it in to the chicken broth./Panaskan minyak dalam wajan antilengket dan tumis bahan pasta, tambahkan serai tumbuk, daun jeruk, dan daun salam. Tumis hingga tercium aromanya. Setelah aromanya keluar, tambahkan ke dalam kaldu ayam.


- Soak the bean vermicelli in hot water for 5 minutes, then strain it and drain it using cold water, so the bean thread is not stuck to each other. Slice the cabbage into thin pieces. Clean the been sprouts’ root then do the same as bean vermicelli./Rendam bihun dalam air panas selama 5 menit, lalu saring dan tiriskan menggunakan air dingin, agar benang buncis tidak saling menempel. Iris kubis menjadi potongan-potongan tipis. Bersihkan akar kecambah kemudian lakukan hal yang sama seperti bihun.



- Cook the soup till the chicken ready. Once the chicken ready, take out the chicken strain using a sieve, then deep fry the chicken. Then shreds the chicken for the topping./Masak sup sampai ayam siap. Setelah ayam siap, angkat ayam menggunakan saringan, lalu goreng ayam. Kemudian suwir ayam untuk topping.
- After the chicken is taking from the broth, then add the chop spring onion and fried garlic (keep half of the fried garlic for the topping) before you turn off the heat./Setelah ayam di ambil dari kuahnya, lalu tambahkan daun bawang cincang dan bawang putih goreng (sisakan separuh bawang putih goreng untuk toppingnya) sebelum Anda matikan api.
